Of recent I've had a lot of proud moments. However, if I had to pick the ultimate one, it would have to be presenting this centrepiece, a celebration of goat meat on - Five Star Kitchen: Britain's Next Great Chef, ep.5, last Friday night on @channel4.
It consisted of:
- Braised Curry Goat Leg Tacos
- Curry Goat Sauce
- Black Bean Rice & Peas
Roti Bread
- Pumpkin and Goats Cheese Dip
- Goat Loin Steak and Salt Cod Salsa Verde
- Pico De Gallo
- Goats Sausage Scotch Egg
- Goat Consommé (It was a broth. I know it was a broth😊👀)
- Horseradish cream
- Avocado Crema
Despite Chef Roux @michel_roux_jr giving me the wide eye look at my 3 hour attempt at a consommé, I still think he secretly respected the intent and the crystal decanter as my chosen serving vessel🤌🏿
My 'platter' was my own marble coffee table top from my living room, which I screwed off and lugged in, which came to me in an 'obviously use that' moment.
As conceited as it may sound, I can't not clap for this. I think it felt modern and showpiece-esque. Abundant and bang on brief. With my concept clearly considered.
I seldom play favourites with my food. If I've served it, trust me when I say it will never be a spur of the moment thing. Like everything, I think it over for an unhealthy amount of time. It's just my style!!!
I am really chuffed to make it to the final alongside @adria_wu and @jbkitchenbirstall. Whatever the outcome may be, this moment was mine.
